Honey is composed primarily of glucose and fructose, in addition to water, but contains other sugars (including lactose, maltose, sucrose, Turan, isomaltose and maltulosa), acids, proteins and minerals. Since this is a solution "sugar" high in fructose, under certain conditions, the honey tends to absorb water. Therefore often used in some baked goods to extend their "shelf life", as it keeps the moisture in the food.
But those are not their only or the most admirable features:
As a sweetener, honey can replace sugar, it contains about 69% of glucose and fructose. It is a source of energy: the honey provides 64 calories per tablespoon, quantity greater than that provided by sugar cane, which provides 50 calories per tablespoon. • It is easy to digest.

Crystallized honey
There are many myths about how to recognize the pure honey, crystallized honey about and whether it is possible to heat or not. According to our research, most honey sold in shops and supermarkets have been boiled and filtered to delay the crystallization process, which is perfectly normal, "but apparently it destroys some nutrients. Crystallized honey is not defective, no wax and no sugar dissolved. If the preferred liquid, just place the jar in a pan of hot water (no bath), or let alone cover, like butter, to smear it on pancakes, bread or hot food.

Research shows that honey contains numerous phenolic and non phenolic antioxidants, the quantity and characteristics depend largely on the floral source from which comes the honey. The darker honeys generally have higher antioxidant content than lighter honeys.

Seeking truth
Been tested in wounds that did not respond to standard treatment with antibiotics and antiseptics, the result, in almost all cases, was that the honey was very effective to fight infection and promote healing quickly.
Although it appears that the honey from certain plants have a greater antibacterial activity than others, so far this has not been verified. But researchers say that while not discovered all the secrets of the honey, is used with caution and carefully and constantly monitor the evolution of the injury, to detect and treat other means any sign of infection. It is necessary to replicate as many times as necessary when the dilution of body fluids. In any case, the honey that is used to treat wounds, burns or other injuries should be stored in a cool, cool side and away from light.
In any event, scientific studies indicate that not all honeys have the same antiseptic power, plus it only studied a few of the thousands of varieties of honey, so we can not yet say that it is a remedy infallible
